Apple cake

This apple cake is from Chowhound, but Mum’s is similar.


120 g butter
240 g flour
120 g sugar
½ cup raisins
1 egg
¼ cup walnuts
1 tsp bicarb
3 medium cooking apples (Granny Smith)
a little milk


  1. Set oven to 180 °C.
  2. Grease and flour ring tin.
  3. Cream butter and sugar.
  4. Add egg.
  5. Sift flour with pinch of salt.
  6. Add it to mixture alternately with little milk till it is stiff paste.
  7. Add raisins and walnuts.
  8. Cook apples with little sugar and water.
  9. Allow apple mixture to cool.
  10. Add bicarb to apples and whisk till fluffy.
  11. Add to first mixture.
  12. Pour into ring tin.
  13. Bake for 60 minutes.
  14. Cover with butter paper.
