Almond Fingers

These are from K33Kitchen but Mum’s are similar.

Ingredients

  • 240 g flour
  • 120 g butter
  • 60 g castor sugar
  • 1 egg yolk
  • 1 tsp BP

Almond Icing:

  • 120 g icing sugar
  • 120 g chopped almonds (not too fine)
  • 1 egg white

Method

  1. Set oven to 200 °C.
  2. Rub butter into flour.
  3. Add BP and sugar.
  4. Knead into stiff dough with egg yolk.
  5. Place in lined tin.
  6. Bake till brown – 20 to 30 minutes.
  7. Turn oven down to 170 °C.

Almond Icing:

  1. Whip egg white.
  2. Add sugar.
  3. Spread over slab.
  4. Sprinkle almonds on top.
  5. Bake till light golden brown.
  6. Cut into fingers while still warm.
